Well, I don't spend a lot of time downtown where your hotel is, but I bugged a friend of mine and she gave me a few ideas for you, and I was able to come up with a few myself.
For food, I don't really know what you like, but we've got tons of options here in Vancouver. My friend recommended The Met, or
Feenies, or
The Cloud 9 Restaurant, aka The Revolving Restaurant.

For seafood, my only real knowledge on that topic lay with Sushi restaurants, and the Vancouver Aquarium... and I'm not sure either of those are QUITE what you're looking for. But hopefully the restaurant guide will give you a few ideas at least.
