So are you making a data disc with mp3 music files on it, or a Red Book audio CD (the standard kind of audio CD)?
If you are trying to make a standard Red Book audio CD, then ripping the songs as mp3 files first not only reduces the quality of the final CD, it may be indirectly responsible for the one-track phenomenon you are experiencing.
Just for fun, try making a CD compilation without using Real Player or mp3 files. Start Nero, select a new audio CD as your project, put the source CD(s) into the drive, drag a few song tracks from the source CD(s) to the Nero audio compilation window, and then burn it. See what that does.
